Microwave Ovens . . . we love them!

Microwave ovens are handy tools of convenience in any kitchen, and lately they’ve come along way. Traditional microwaves have been somewhat limiting in terms of functionality. That’s when it’s useful to also have a conventional oven, toaster oven and convection oven too. But the ultimate in convenience and efficiency is to combine the functions of these various ovens into one appliance.

You may review these amazing Combos, and still be bent on buying and using one or the other. If so, I have listed a few outstanding standalone models. But if you are curious about the advantages of that rare new breed, the Microwave Toaster Oven Combination, then read on.

But choosing can be challenging. What Is A Convection Microwave?

Here are a few lunch-y recipes for you to try in solving the what-to-have-for-lunch question.

Chicken Sausage Bread Wrap

What you’ll need:

I package pre-cooked herbal chicken sausages.

3 slices pepper jack cheese sandwich slices, cut into long 1 inch strips.

1 package Pillsbury Crescent dough.

Crushed red pepper

Strawberries for garnish or bed of Spring Mix or baby spinach leaves tossed in light vinaigrette.

In the gourmet section of your store where natural cold cuts are featured, buy the pre-cooked herbal chicken sausages, usually come in a package of 6.

In a shallow metal pan, line with foil if you like, place the sausages in a row with some room around them to spare. Cut strips of your favorite cheese, such as sandwich slices of pepper jack cheese then wrap around each sausage.  Next use Pillsbury Crescent dough, carefully wrapping a strip around the sausage in a spiral fashion. Can sprinkle with Crushed Red Pepper if desired.

Bake on medium heat about 15 minutes or until  bread is golden brown.  Serve with cilantro sprigs and a handful of strawberries on the side.  Alternate serving suggestion is serve on top of a bed of Spring Mix greens or baby spinach lightly tossed with vinaigrette.

What you will need:

One flat faochia bread from your grocery store or bakery.

I package imitation crabmeat

Shredded mozzarella cheese

Celery and onion minced

Avocado, ripe

Cilantro

Slice bread in half long ways to create a thinner slice for the sandwich.   Cut up crabmeat in smaller pieces as desired put in medium mixing bowl.  Add mayo to taste, minced onion and celery. Place crabmeat mixture on top of bread spreading evenly.  Add avocado pieces on top. Sprinkle with shredded mozzarella cheese.  Place in toaster over for about 10 minutes until cheese in melted and crust around the edges is starting to brown. Watch carefully and take out when all is melted and hot through and through.  This is an excellent sandwich keep as a left over and re-heat the next day

What you will need:

1 package corn tortillas

Leftover taco mix from ground beef or turkey burger

Minced onion and white and red; lettuce

Shredded taco cheese

Tomatoes

Cilantro.

Optional, black olives and avocado.

In hot pan or griddle lightly oiled, fry tortillas turning to fry both sides 2 to 3 minutes.  Put on paper towels.  Put tortillas in the pan you will use for the toaster over.  Spoon on leftover taco mix onto each taco.  Add onion.  Sprinkle on taco cheese. Bake in the toaster oven for about 5 minutes until cheese is melted and taco meat is hot.  Remove from toaster oven.  Add lettuce, onion, tomato.  Also black olives and avocado can be added if desired.  garnish with Cilantro. Quick and yummy!

You can feed an army with these!

What you will need:

2 cans tuna

Minced onion and celery to your own proportions

Mayo

Two or more tomatoes

Shredded cheddar cheese

1 package white or white English muffins.

Parsley or Cilantro for garnish

Mix in medium bowl tuna, mayo, onion, and celery.  On a baking tray in the oven split English muffins, as many as you need for your “gang” who are going to eat lunch . . . butter and toast on broil for a couple of minutes until light brown.  Spread tuna mixture on each piece of toasted English muffin. Top with a tomato slice. Put a dollop of mayo on each sandwich on top of the tomato slice. Sprinkle with cheddar cheese. Place in the toaster oven.  Toast or broil until the top of the sandwich is toasty brown. Serve. Enjoy!

 

And there is always PIZZA!

Here is my quick Toaster Oven recipe for pizza.

What you will need:

Italian flabread or Faochia bread.

Approx. 4 TBS your choice of pre-made spaghetti sauce.

Faochia bread, sliced in half horizontally and cut a large square.

Mozzarella cheese, and cheddar, shredded

Fresh Tomatoes – fresh basil – dry basil to sprinkle on top

Your choice of pepperoni or cooked crumbed sausage plus mushrooms

Green bell pepper – minced white onion- minced red onion

Place your sliced Italian bread browed side up on the pan that’s going into the toaster oven.  Brush on red spaghetti sauce.  Sprinkle on shredded cheese, add minced onion, sliced mushroom,  thinly sliced pieces of green pepper, pepperoni or sausage; add thinly sliced tomato, sprinkle on dry basil. For vegetarian pizza, leave off meat.  Put in toaster oven on medium heat for 10 to 15 minutes.  Watch until cheese is melted and sandwich is thoroughly heated through and through.  Enjoy this quick version of pizza!
